Set Menus on Stocktake Online

Recipes on Stocktake Online can be set up to deal with your Set Menu offerings. The way they are applied will depend heavily on your particular menu setup and your EPoS.

Below are a few examples of Set Menu options and how you can set them up on Stocktake Online.

 

Set Menu Modifier Pairing

Using Modifiers on your EPoS and recipes on Stocktake Online, you can manage wine and food pairing options. The example used here is for a wine pairing menu.

EPoS - Set up Modifier Buttons

  • To charge for the item on your EPoS the sales price should be attached to the Item/Group/Button named 'wine pairing'. Once you select 'wine pairing' on your EPoS it should give you all the options of wines as modifiers with zero (0) sales price that the customer can choose from.

STO - Collect the revenue

  • The first step is to create a dummy product you can use to fill out the recipe details. This items' details do not matter, but it should be made clear within STO that it is not a real item, perhaps by entering it in a separate category.

  • Next you will need to create a recipe with the newly created dummy product as the ingredient, with the sales price of your 'wine pairing' option so you can collect the revenue every time you sell this option, while not depleting anything through this recipe / PLU.
    • As with the dummy product, it should ideally be named and categorised appropriately.

Modifiers

  • You will need to create recipes for all wine options which are part of the 'wine pairing' offer that your customers can choose from.
  • These recipes need to be created with a zero (0) sales price as the revenue for these items has been placed on the 'wine pairing' button.
    • This means that once you sell the wine it is deducted from your stock.

Please Note: When you are creating the recipes do not forget to match the recipes with the items from your EPoS and enter the correct PLU.

This will mean that product GPs for your various Set Menu offerings will be slightly lower as a result of selling them at zero (0) sales price. However, the dummy product recipe on the Set Menu button itself will even out your revenue, so that your overall GP will be accurate.

 

Percentage Sales Option

Another option you can use provided you have two separate locations for Food and Beverage is to use the % of EPoS Sales option on your recipes to control where revenue is allocated.

  • For example, if you are selling a food item and a glass of wine, you can enter the same recipe twice in your two separate locations.

  • The recipe / PLU in the food location will include only the food item(s) offered, with the % of EPoS Sales option set to reflect the difference in cost of goods.
  • In this example, a Steak & Glass of Wine option may be set to 80% of revenue on the Steak, and 20% of revenue on the Glass of Wine.

In this way, stock is correctly depleted and revenue correctly allocated to each product in their respective Sections.

There are other options for Set Menus on STO, as which option is appropriate will depend on your EPoS, the setup within the EPoS as well as your products, categories and recipes on Stocktake Online.
